In order to affect calories in, many nutritionists and weight loss experts recommend finding out your maintenance level of calories and then eating 500 calories per day below that. One pound equals burning 3500 calories, so a 500 calorie/day deficit means 1 lb a week of weight loss. When you combine that with "calories out" (exercise, other methods of boosting metabolism, etc.) you can really start to burn away the fat.
